I recently went on a cinnamon raisin roll baking craze. Largely because my mum is a big fan of cinnarolls and she's my biggest eater (as of now). It took a couple of rounds of baking but I finally figured out the trick to making the sides soft and moist -- packing them into the baking tin cheek by jowl. 



I used the this recipe from Epicurious. 

Possibly the best muffins I've made ever. Period! And all thanks to this fabulous recipe by Joy the Baker whose website I've only recently discovered but am already hooked.

The pretty much fail-proof recipe from British chef Rachel Khoo (of My Little Paris Kitchen fame) that has yet to disappoint me (and I've already baked it about 5 times!). The best moment has got to be when it's first out of the oven, its insides still steaming hot with its crust beginning to cool just enough to be peeled off and crunched on inside your mouth. After savoring that moment, you can then proceed to scoop a generous amount of vanilla bean ice cream onto a delicately sliced out piece. Then the magic happens.
